Malai Kofta

MALAI KOFTA
Kofta is a ball made of cooked vegetables. The kofta is delicate and flavorsome. The gravy will complement the kofta.

Main Ingredients : Paneer and potato
Ingredients :

Potato boiled – 1 cup grated

Carrot boiled- 1/2 cup grated

Paneer – 1 cup grated

Beans – chopped and cooked – 1/2 cup

Green chilli – 3 nos

Cashew powder – 1/2 cup

Maida – 2 tbsp

Tomato – 1 cup chopped

Onion – 1/2 cup chopped

Ginger garlic chopped – 2 tbsp

Chilli powder – 2 tbsp

Malli powder – 2 tbsp

Jeera – 2 tbsp

Turmeric – 1 tbsp

Jeera powder – 1 tbsp

Salt to taste

Oil – 2 cups to fry
Preparation :
For Kofta
  • Boil and cook the vegetables. (Potato, Beans, Carrots). Squeeze all the water.
  • Grate Carrots, potato and paneer in a bowl.

  • Add beans to it.

  • Add chilli powder, malli powder, Jeera powder and turmeric. (Nuts optional)
  • Little salt. Make a good size ball.
  • In another small bowl you can have maida just to coat the balls.

  • Take a pan, heat it with oil to fry.

  • Deep fry the balls and drain the oil in a tissue.

  • Keep it aside.
For gravy
  • Just toast the cashew in a dry pan. Grind to a fine powder.
  • Then add oil to the pan, Add onions, chilli, ginger garlic. Saute well.
  • Add tomato, cook
  • Add chilli powder, Turmeric, jeera powder and malli powder(each 1 tbsp)
  • Saute well. Let it cool.
  • Then grind it into a fine paste.
  • Now in the pan, add oil. Then the jeera.
  • Add the paste to the pan. With 1 cup of water. Let it boil. Then add cashew powder.
  • It will make the gravy thick. Turn off the heat.
  • Garnish with Heavy cream.
While serving you can add balls to the gravy. Not before that.
